Barrell Craft Spirits Seagrass Grey Label Rye Whiskey Tasting Notes
Nose: The savory side of rye is showcased by an array of exotic spices and seeds–caraway, fenugreek, dill, and mustard.
Palate: Extremely oily, displaying notes of peanut, coconut and tea tree
Finish: The apricot brandy casks pick up where the madeira left off, bursting forth with passionfruit, mirabelle plum, and banana peel.
Distillery Information
Dovetail Distillery was conceived in 2016 by Nicholas Cataldo. Before opening Dovetail Distillery, he was a chef for nearly 20 years. He spent most of his career working in top restaurants in NYC. He got started in distilling while making a sauce for a dish he was working on. He met some folks in New York that showed him how a distillery operation works and began putting the pieces together. He spent almost 3 years working on a recipe that brought out his favorite grain, oats. Dovetail Distillery now has a unique product unlike anything on the market. Being in the restaurant business for so long he was able to sample 100’s of small batch craft spirits. When it comes to whiskey, Dovetail Distillery stands apart as the oat comes through in the final product, it is not just an element in the mash bill. It has an upfront bit of spice with sharp grassy tones that are followed by a soft caramel finish.
