This open-air fermented, sour mash style whiskey is double distilled. Aged three years in heavily charred American oak barrels, this blend of 95% rye and 5% barley from Laws Whiskey House in Denver Colorado comes in at a solid 100 proof. This whiskey is the blended half of 10 barrels of whiskey produced by Laws, with the other half being bottled as single barrel expressions of rye whiskey. The name is “Secale” comes from the Latin name for rye–“secale cereale”. Only 750 bottles were released in 2015 and will not be available again until the fall of 2016.
A.D. Laws Small Batch Secale Straight Rye Whiskey Tasting Notes
Nose: Rye is quite evident in the nose, with notes of baked scones, oak, brown sugar and cereal grains.
Palate: On the palate, sweet vanilla notes are interspersed with big cinnamon flavors. Underneath it all, rich oak, toasted almond and orange peel are detectable along with fresh spearmint and cocoa nib.
Finish: The finish is short but satisfying with orange blossoms, tea spices and clove making appearances against a background of oak and cinnamon.

It’s here where Al Douglas Laws, founder and creative visionalry behind Laws Whiskey House, takes an obsessive, hands-on approach to every aspect of whiskey production as he mills the grains, combines them and cooks them to create an incredibly complex sour mash.
